Smooth and creamy, it elevated our simple meal to unexpected heights.<\/p>\n<p>Nickel City Cheese is the outcome of a dream Nicole Paquin cherished for many years while toiling as a civil servant in the Ontario Attorney General\u2019s ministry in Sudbury. She was originally from Qu\u00e9bec and grew up with fresh curds readily available.<\/p>\n<p>\u201cI remembered the fromage des villages from where I grew up in Qu\u00e9bec, and wanted to bring that here,\u201d she said. \u201cWe had fresh cheese on a regular basis.\u201d<\/p>\n<p>She took early retirement, studied cheesemaking at University of Guelph, and in August, 2018, opened the doors of Nickel City Cheese.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-7904\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-300x294.jpg\" alt=\"\" width=\"300\" height=\"294\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-300x294.jpg 300w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-1024x1004.jpg 1024w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-768x753.jpg 768w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-1536x1505.jpg 1536w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-2048x2007.jpg 2048w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-665x652.jpg 665w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2022\/10\/nickel-city-nicole-265x260.jpg 265w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>She makes cheddar exclusively and offers nearly 20 flavours of fresh cheese curds. Thus, it was a natural progression to open a Poutinerie run by her son next to the creamery. And, eventually, a donut shop that features funnel cake, and now an ice cream stand, too.<\/p>\n<p>The milk comes from a Dairy Farmers of Ontario co-op supported by 14 local farms.<\/p>\n<p><strong>Double disappointment<\/strong><\/p>\n<p>On our return trip from the Rockies, we planned to again stop in Chelmsford for deep-dried curds and the excellent poutine.
