{"id":6076,"date":"2020-05-02T10:54:10","date_gmt":"2020-05-02T14:54:10","guid":{"rendered":"https:\/\/cheeseloverca.wordpress.com\/?p=6076"},"modified":"2020-05-22T01:22:41","modified_gmt":"2020-05-22T01:22:41","slug":"potatoes-bacon-and-cheese-what-is-there-not-to-like","status":"publish","type":"post","link":"https:\/\/cheeselover.ca\/index.php\/2020\/05\/02\/potatoes-bacon-and-cheese-what-is-there-not-to-like\/","title":{"rendered":"Potato, bacon and cheese: What&#8217;s there not to like?"},"content":{"rendered":"<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6081 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/tartiflette-425f-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"450\">Here we go, our first attempt to make La Tartiflette Gourmande following a Chef Club video recipe, with the help of Sarmite and Maris Vitols, friends in cheese.<br \/>\n<\/strong><\/p>\n<p><strong>Instead of Reblochon, the French classic, we used an outstanding Canadian cheese,&nbsp; Origine de Charlevoix made by <a href=\"http:\/\/www.fromagescharlevoix.com\/english\/default.html\">Laiterie Charlevoix<\/a><\/strong><strong>&nbsp;in Qu\u00e9bec. <\/strong><\/p>\n<p><strong>Our tartiflette turned out rich and delicious!<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6080 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/origine-de-charlevoix-1-1.png?w=720\" alt=\"\" width=\"720\" height=\"720\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/origine-de-charlevoix-1-1.png 750w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/origine-de-charlevoix-1-1-200x200.png 200w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/origine-de-charlevoix-1-1-300x300.png 300w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/origine-de-charlevoix-1-1-150x150.png 150w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/origine-de-charlevoix-1-1-100x100.png 100w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/>Origine de Charlevoix is made by <a href=\"http:\/\/www.fromagescharlevoix.com\/english\/default.html\">Laiterie Charlevoix<\/a> in Baie-Saint-Paul one hour northeast of Quebec City, using milk from Canadienne breed cows. In taste and texture, the cheese is similar to Reblochon, the French classic.<\/p>\n<p>Ours was sourced by <a href=\"http:\/\/countrycheesecompany.com\">Country Cheese Company<\/a> in Ajax, Ontario.<\/p>\n<p>Origine de Charlevoix was named Best Mixed Rind Cheese in the most recent <a href=\"http:\/\/www.cheeseawards.ca\">Canadian Cheese Awards<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6084 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.11.13-1-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"758\"><\/p>\n<p>Pan-fry Yukon Gold potatoes with red onion until the spuds have softened. Then dress with parsley.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6085 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.11.23-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"960\"><\/p>\n<p>Sarmite Vitols makes sure the potatoes are just right.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6102 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.14.53-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"960\"><\/p>\n<p>Time to layer the baking pan with bacon.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6087 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.17.59-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"453\"><\/p>\n<p>The bed of bacon is ready. We use Dry Cured Bacon from <a href=\"https:\/\/www.seedtosausage.ca\">Seed to Sausage<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6088 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.19.02-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"726\"><\/p>\n<p>Two wheels of Origine de Charlevoix cut in half. We resist the temptation to start nibbling on the aromatic cheese.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6089 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.20.52-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"540\"><\/p>\n<p>That&#8217;s two vital food groups looked after.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6090 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.29.52-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"858\"><\/p>\n<p>Now comes the third important food group: potatoes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6092 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.30.52-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"960\"><\/p>\n<p>Potatoes surround the cheese on a bed of bacon. The mere words sound delicious!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6093 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.31.52-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"536\"><\/p>\n<p>Now we add the secret ingredient: cr\u00e8me fraiche.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6100 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-12.34.19-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"447\"><\/p>\n<p>More potatoes finish the prep before we head for the oven for 20+ minutes at 400F to 425F.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6096 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-13.10.56-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"416\"><\/p>\n<p><span id=\"fbPhotoSnowliftCaption\" class=\"fbPhotosPhotoCaption\"><span class=\"hasCaption\">Voila!<\/span><\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6097 size-large\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2020\/05\/2018-11-09-13.15.27-1.jpg?w=720\" alt=\"\" width=\"720\" height=\"540\"><\/p>\n<p>Rich and delicious, a feast fit for a queen. With a green salad featuring fresh mango and avocado drizzled with a poppy-seed vinaigrette.<\/p>\n<p>For libation, the in-house sommelier selected a lovely pinot gris from <a href=\"https:\/\/www.acrobatwine.com\">Acrobat Wine<\/a> in Oregon.
