The cheeses produced at Gunn&#8217;s Hill are truly unique, although you can taste the Swiss influence from techniques and recipes Cheesemaker Shep Ysselstein learned while making cheese in the Swiss Alps. Handeck is a handcrafted, washed-rind cow&#8217;s milk cheese that is produced using the same methods as a typical Swiss mountain-style cheese. Handeck Reserve is delicately aged for 36 months on cedar planks, adding robust quality to the cheese. It is a drier hard cheese with rich and complex flavours and nutty overtones.
