His eponymous Fuoco, a soft washed-rind cheese made with water-buffalo milk, was named Best Canadian Cheese and honoured as one of the top 15 cheeses in the world.<\/strong><\/p>\n<p>Three Canadian cheeses were among the 62 which attained Super Gold recognition. They are:<\/p>\n<p><em>Washed rind cheese<\/em><\/p>\n<ul>\n<li><strong>Fuoco, <a href=\"http:\/\/fromagesduquebec.qc.ca\/en\/cheese_makers\/?fromagerie=Fromagerie_Fuoco\">Fromagerie Fuoco, <\/a>Sainte-Sophie, Qu\u00e9bec<\/strong><\/li>\n<\/ul>\n<p><em>Farmhouse cheddar<\/em><\/p>\n<ul>\n<li><strong>Avonlea Clothbound Cheddar. <a href=\"http:\/\/www.cowscreamery.ca\">Cows Creamery, <\/a>Charlottetown, Prince Edward Island<\/strong><\/li>\n<\/ul>\n<p><em>Hard cheese produced on small farm or dairy<\/em><\/p>\n<ul>\n<li><strong>Alfred Le Fermier, <a href=\"http:\/\/www.fromagerielastation.com\/\">Fromagerie La Station, <\/a>Compton, Qu\u00e9bec<\/strong><\/li>\n<\/ul>\n<blockquote><p><span id=\"fbPhotoSnowliftCaption\" class=\"fbPhotosPhotoCaption\"><span class=\"hasCaption\">&#8220;Fuoco displays beautiful balance between the paste and rind, soft creamy rich paste that runs through right to the finish, very lactic milk flavour with strong barnyard scent, wonderful with crusty bread.
