Four years ago, she made her first cheese.<\/p>\n<figure id=\"attachment_5338\" aria-describedby=\"caption-attachment-5338\" style=\"width: 197px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_mira-1.jpg\" data-lightbox=\"gal[5334]\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-5338 size-medium\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_mira-1.jpg?w=197\" alt=\"Mira Schenkel in her aging room.\" width=\"197\" height=\"300\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_mira-1.jpg 400w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_mira-1-197x300.jpg 197w\" sizes=\"auto, (max-width: 197px) 100vw, 197px\" \/><\/a><figcaption id=\"caption-attachment-5338\" class=\"wp-caption-text\">Mira Schenkel in her aging room.<\/figcaption><\/figure>\n<p>On the first weekend of June, her wonderful cheese called Clover captured Best of Show honours and won the washed-rind category in the inaugural <a href=\"http:\/\/cheesefestival.ca\/amateurcheesemaking\/\" target=\"_blank\" rel=\"noopener noreferrer\">Canadian Amateur Cheesemaking Awards<\/a> held in conjunction with <a href=\"http:\/\/cheesefestival.ca\" target=\"_blank\" rel=\"noopener noreferrer\">The Great Canadian Cheese Festival<\/a> in Picton, Ontario.<\/p>\n<p>\u201cWhile mostly self-taught, I am truly grateful to my dear and hardworking husband for encouraging me to become a cheesemaker and also for his great care and milking of our cows to provide the highest quality milk which makes the cheese special,\u201d Mira wrote in an email. She also credits <em><a href=\"http:\/\/www.amazon.com\/200-Easy-Homemade-Cheese-Recipes\/dp\/0778804658\" target=\"_blank\" rel=\"noopener noreferrer\">200 Easy Homemade Cheese Recipes<\/a><\/em> by Debra Amrein-Boyes, an award-winning cheesemaker at <a href=\"http:\/\/www.farmhousecheeses.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">The Farm House Natural Cheeses<\/a> in Agassiz, B.C.<\/p>\n<p>Along with many other animals the farm, the Schenkels have four family cows, two Jerseys (Amber and Peekaboo) and two crossbreds (Belle and Brittney) that provide the fresh unpasteurized milk from which Mira make her cheese.<\/p>\n<figure id=\"attachment_5340\" aria-describedby=\"caption-attachment-5340\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_britney-1.jpg\" data-lightbox=\"gal[5334]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-5340\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_britney-1.jpg?w=300\" alt=\"Mira Schenkel with Brittney, one of her four dairy cows on the farm in Salmon Arm, B.C. \" width=\"300\" height=\"248\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_britney-1.jpg 400w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2015\/06\/px_bos_britney-1-300x248.jpg 300w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-5340\" class=\"wp-caption-text\">Mira Schenkel with Brittney, one of four dairy cows on the family farm in Salmon Arm, B.C.<\/figcaption><\/figure>\n<p>Since making her first mountain cheese four years ago, Mira says she has enjoyed making a variety of cheeses including Gouda, Maasdammer, Camembert and, of course, Clover\u2014all always aged for a minimum of 60 days due to the use of unpasteurized milk.<\/p>\n<p>\u201cThe unique flavour of my award-winning Clover cheese features clover and herbs which I bring in from Switzerland,\u201d Mira explains.<\/p>\n<p>The judges loved Clover:<\/p>\n<blockquote><p>\u201cThis raw-milk Alpine cheese has a wonderful clover and grass aroma that comes from the Swiss Clover wash used on the rind. The wonderful golden hue of the paste is dotted with occasional small eyes which developed during ripening that complement the make-up of the cheese. The cheese has a nice clover flavour with hints of honey and finishes with a nuttiness that hints of hazelnuts or roasted almonds. The texture of this cheese is as complex as the flavor.
