A week after I made Four Cheese Potato Gratin as a side for a holiday dinner, I dreamt of the wonderful aroma of four cheeses melting in warm milk. Even now, when I close my eyes and inhale, it&#8217;s as if I were standing in front of the open oven.<\/strong><\/h3>\n<h3><strong>There is no better smell to warm the heart on a winter day.<\/strong><\/h3>\n<p>I picked the recipe described by Kelly Jaggers in her blog <a href=\"http:\/\/www.evilshenanigans.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Evil Shenanigans<\/a> because of the mouth-watering photos she published. That&#8217;s her gratin above. Mine appears below.<\/p>\n<figure id=\"attachment_4011\" aria-describedby=\"caption-attachment-4011\" style=\"width: 468px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2013\/01\/px_4_cheese_gratin-1.jpg\" data-lightbox=\"gal[4008]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-4011\" alt=\"The Four Cheese Potato Gratin as it came out of my oven.\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2013\/01\/px_4_cheese_gratin-1.jpg\" width=\"468\" height=\"255\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2013\/01\/px_4_cheese_gratin-1.jpg 1000w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2013\/01\/px_4_cheese_gratin-1-300x164.jpg 300w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2013\/01\/px_4_cheese_gratin-1-768x420.jpg 768w\" sizes=\"auto, (max-width: 468px) 100vw, 468px\" \/><\/a><figcaption id=\"caption-attachment-4011\" class=\"wp-caption-text\">The Four Cheese Potato Gratin as it came out of my oven.<\/figcaption><\/figure>\n<p>I pretty well followed Kelly&#8217;s recipe&#8211;<a href=\"http:\/\/www.evilshenanigans.com\/2009\/10\/four-cheese-potato-gratin\/\" target=\"_blank\" rel=\"noopener noreferrer\">Click here for the recipe and more photos<\/a>&#8211;except for the cheese:<\/p>\n<ul>\n<li>Instead of Fontina and Gruyere, I used Louis d&#8217;Or from <a href=\"http:\/\/www.fromageriedupresbytere.com\/\">Fromagerie du Presbyt\u00e8re<\/a> in Qu\u00e9bec;<\/li>\n<li>Instead of cream cheese, I used Comox Camembert from <a href=\"http:\/\/www.naturalpastures.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Natural Pastures Cheese<\/a> in British Columbia;<\/li>\n<li>Instead of any sharp cheddar, I went with <a href=\"http:\/\/www.ilchester.co.uk\/cheeses.php?ch_id=1&amp;id=\" target=\"_blank\" rel=\"noopener noreferrer\">Applewood Smoked Cheddar<\/a> from the U.K.;<\/li>\n<li>Instead of just any parmesan, I went with the real deal, <a href=\"http:\/\/www.parmigianoreggiano.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Parmigiano-Reggiano<\/a> from Italy.<\/li>\n<\/ul>\n<p>The only thing I&#8217;d do different the next time is add a pinch of salt and pepper between layers and use more cheese than the recipe suggests, say, four cups total instead of three.<\/p>\n<p style=\"text-align:right;\"><em>\u2014Georgs Kolesnikovs<\/em><\/p>\n<p><em>Georgs Kolesnikovs is Cheese-Head-in-Chief at CheeseLover.ca and founder of <a href=\"http:\/\/cheesefestival.ca\/\">The Great Canadian Cheese Festival<\/a>.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I kid you not.
