I had the farm, the technical and financial resources to build on, and a dairy goat herd to provide milk. \u00a0We agreed to collaborate in operating an on-farm cheese dairy where I would milk the goats and assemble and finance the project while she would make the cheese.&#8221;<\/p>\n<figure id=\"attachment_3566\" aria-describedby=\"caption-attachment-3566\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2012\/05\/px_cl_cestbon_chevre-1.jpg\" data-lightbox=\"gal[3559]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-3566\" title=\"px_cl_cestbon_Chevre\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2012\/05\/px_cl_cestbon_chevre-1.jpg?w=300\" alt=\"\" width=\"300\" height=\"243\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2012\/05\/px_cl_cestbon_chevre-1.jpg 800w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2012\/05\/px_cl_cestbon_chevre-1-300x243.jpg 300w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2012\/05\/px_cl_cestbon_chevre-1-768x623.jpg 768w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-3566\" class=\"wp-caption-text\">The go-to chevre for restaurants and consumers.<\/figcaption><\/figure>\n<blockquote><p>But when that approach didn&#8217;t work out, Taylor, within the next year, developed his own philosophy and operating guidelines for what could be accomplished in the cheese industry, and C\u2019estbon Cheese was born.\u00a0 \u201cI craft the milk with quality in mind always. \u00a0I do it right the first time, and then repeat. \u00a0I don&#8217;t pretend to make the perfect cheese, but if I don&#8217;t like it, it won&#8217;t leave my studio,\u201d says Taylor of his discerning process. \u00a0\u201cI could make more cheeses and in greater volumes, but to be truly artisan, I feel every cheese must have my fingerprint on it, figuratively and literally. \u00a0This I believe separates\u00a0C&#8217;estbon\u00a0from many of our peers.\u201d<\/p><\/blockquote>\n<p>By personally making the cheese once a week by hand at the on-farm facility in a traditional method passed down by his father, Taylor\u2019s plant was the first such approved in Ontario by both the Federal and Provincial governments to process its milk on-site, a worthy achievement that has helped subsequent farmers within the industry obtain the same consent.<\/p>\n<p>Although the soft, unripened cheese was first created from a herd of 200 purebred Toggenburg and LaMancha goats, the production quickly evolved to needing more quality milk than his original herd could provide.\u00a0 As a result, his current partnership with Ontario\u2019s leading goat-milk supplier, Hewitt\u2019s Dairy, before long commenced to ensure there would always be sufficient milk to meet his exacting standards.<\/p>\n<p>Adding to its distinctive merit, he insists the price\u00a0of his cheese be kept reasonable to guarantee this variety is accessible for everyone; his leading desire is to see ch\u00e8vre as a staple on every table, not as a luxury product.<\/p>\n<blockquote><p>\u201cArtisan, food scientist\u00a0and magician,\u00a0I wear all three hats,\u201d shares Taylor about the future of his retirement-plan-turned-dairy-dream, \u201cso C&#8217;estbon Cheese will exist as long as I continue to be inspired and remain in awe of the alchemy of milk transitioning into curd, then aging it at the hands of a craftsman into something greater than the sum of its parts.\u201d<\/p><\/blockquote>\n<p>C&#8217;estbon Cheese is a Featured Cheesemaker at <a href=\"http:\/\/cheesefestival.ca\/\" target=\"_blank\" rel=\"noopener noreferrer\">The Great Canadian Cheese Festival<\/a> this weekend.
