Later that day, when I talked with <a href=\"http:\/\/www.cheeseculture.ca\/\">Julia Rogers<\/a> on the phone about <a href=\"http:\/\/cheeseloverca.wordpress.com\/events\/\">The Great Canadian Cheese Festival<\/a>, I mentioned the Limburger variation and she suggested we sometime try<a href=\"http:\/\/en.wikipedia.org\/wiki\/Pont-l%27%C3%89v%C3%AAque_%28cheese%29\"> Pont-l&#8217;\u00c9v\u00eaque<\/a>, the pungent cheese of Normandy. Which we will do.<\/p>\n<p><a href=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert-1.jpg\" data-lightbox=\"gal[1396]\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1402\" title=\"px_al_09_18_grilled_albert\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert-1.jpg\" alt=\"\" width=\"468\" height=\"297\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert-1.jpg 800w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert-1-300x191.jpg 300w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert-1-768x489.jpg 768w\" sizes=\"auto, (max-width: 468px) 100vw, 468px\" \/><\/a>Another delicious sandwich resulted from the use of <a href=\"http:\/\/www.fromage-st-albert.com\/eng\/eng.htm\">St. Albert Extra Old Cheddar<\/a>. Cheddar is such a natural on toasted bread, but we did expect Extra Old Cheddar to have more oomph. On the other hand, as I believe it&#8217;s aged only 22 months, our expectations were unreasonable.<\/p>\n<p><a href=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert_blue-1.jpg\" data-lightbox=\"gal[1396]\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1403\" title=\"px_al_09_18_grilled_albert_blue\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert_blue-1.jpg\" alt=\"\" width=\"468\" height=\"287\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert_blue-1.jpg 800w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert_blue-1-300x184.jpg 300w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/09\/px_al_09_18_grilled_albert_blue-1-768x471.jpg 768w\" sizes=\"auto, (max-width: 468px) 100vw, 468px\" \/><\/a>But, combine the St. Albert with a supermarket Blue such as the Danish Rosenborg, and it immediately became our favourite of the cruise. The Blue gives the Cheddar the zing that we love. (We almost always have <a href=\"http:\/\/www.rosenborgcanada.com\/english\/index.php\">Rosenborg Castello<\/a> in the cheese bin. Not so much for snacking or eating as for use in salads. It&#8217;s inexpensive and readily available in supermarkets.)<\/p>\n<p>Our all-time favourite grilled-cheese was the <a href=\"http:\/\/www.camembert-france.com\/\">Camembert<\/a> and Blue combination we enjoyed maybe 15 years ago, also on a boat, this time in <a href=\"http:\/\/www.florida-southwest.com\/\">Southwest Florida<\/a>.
