They were Melissa Craig, head chef at <a href=\"http:\/\/www.bearfootbistro.com\/bearfoot\/\">The Bearfoot Bistro<\/a> in Whistler, British Columbia; Paul Rogalski of <a href=\"http:\/\/www.rougecalgary.com\/main\/index.php\">Rouge Restaurant<\/a> in Calgary; Corbin Tomaszeski of <a href=\"http:\/\/www.holtrenfrew.com\/holts\/en\/cafe\/70912\/Holts-Cafe-Toronto-Bloor\/\">Holt\u2019s Cafe<\/a> in Toronto (represented by his sous Lucas Castle); and Michael Howell from <a href=\"http:\/\/www.tempest.ca\/\">Tempest Restaurant<\/a> in Wolfville, Nova Scotia.<\/p>\n<p>Each competitor cooked two original grilled-cheese creations in 20 minutes, in front of a foodie crowd at the <a href=\"http:\/\/www.theex.com\/\">Canadian National Exhibition<\/a>. The dishes, all showcasing Canadian cheese, were then presented to a panel of expert judges, comprised of <a href=\"http:\/\/lucywaverman.com\/all-about-lucy.html\">Lucy Waverman<\/a>, <a href=\"http:\/\/www.torontosun.com\/life\/columnists\/rita_demontis\/\">Rita DeMontis<\/a> and <a href=\"http:\/\/www.thestar.com\/comment\/columnists\/447659\">Corey Mintz<\/a>, all food writers. <a href=\"http:\/\/cheeseofcanada.ca\/about\/\">Gurth Pretty<\/a>, cheese author and chair of <a href=\"http:\/\/www.ontariocheese.org\/\">Ontario Cheese Society<\/a>, was the engaging master of ceremonies.<\/p>\n<figure id=\"attachment_1319\" aria-describedby=\"caption-attachment-1319\" style=\"width: 275px\" class=\"wp-caption alignright\"><a href=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/08\/px_cl_grate_winner1-1.jpg\" data-lightbox=\"gal[1308]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1319\" title=\"px_cl_grate_winner\" src=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/08\/px_cl_grate_winner1-1.jpg?w=275\" alt=\"\" width=\"275\" height=\"300\" srcset=\"https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/08\/px_cl_grate_winner1-1.jpg 600w, https:\/\/cheeselover.ca\/wp-content\/uploads\/2010\/08\/px_cl_grate_winner1-1-275x300.jpg 275w\" sizes=\"auto, (max-width: 275px) 100vw, 275px\" \/><\/a><figcaption id=\"caption-attachment-1319\" class=\"wp-caption-text\">Chef Michael Howell: Grilled-cheese champion.<\/figcaption><\/figure>\n<p>Chef Michael Howell was hailed the champion for his recipe dubbed the \u201c<a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/panini-toscano\">Panini Toscano<\/a>,&#8221; an Italian-inspired creation that featured Nova Scotia <a href=\"http:\/\/www.foxhillcheesehouse.com\/aboutus.html\">Fox Hill Cheese House<\/a> Havarti accompanied by prosciutto, figs, arugula, lemon aioli and balsamic vinaigrette.<\/p>\n<p>Howell, who has run Tempest Restaurant for the past eight years following stints in Toronto and the United States, is committed to local, sustainable cooking. He believes the competition will inspire Canadians to experiment with locally produced cheese:<\/p>\n<p>&#8220;This wonderful cook-off and my fellow chefs have all shown us that making a winning grilled cheese sandwich is simple: all you need is bread, your favourite Canadian cheese, and some imagination.&#8221;<\/p>\n<p>Judge Rita DeMontis described the winning creation as being \u201ca burst of flavour. A mouthful of joy!\u201d Waverman praised the calibre of the food prepared by all four chefs, while Mintz declared that the judging might have been \u201cthe most difficult thing I\u2019ve ever had to do in my life.\u201d<\/p>\n<p>The task assigned to the attendees was much easier: after watching the chefs battle it out, we were able to sample their tasty inventions. While they were all scrumptious, I was partial to Chef Craig\u2019s decadent <a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/french-toast-grilled-cheese\">French Toast Grilled Cheese<\/a>, which featured Canadian camembert, figs, and walnut cranberry bread.<\/p>\n<p style=\"text-align:left;\">All the chefs\u2019 recipes are available <a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/featured\/grilled-cheese\">online<\/a>. I plan to recreate them all.<em> <\/em><\/p>\n<p style=\"text-align:right;\"><em>\u2014Phoebe Powell<\/em><\/p>\n<p><em>Phoebe Powell, a roving reporter for CheeseLover.ca, is crazy about grilled cheese.
